What’s the secret to a perfect risotto?It’s all in the method, and Chef Fabricio Daro will show you how to prepare one of Italy’s most beloved comfort foods, and how to prepare it right.
Perfect risotto cannot be rushed, and neither is Classic Risotto: A Step-by-Step Guide.
Under Chef Fabricio’s guidance, you’ll learn why the right rice makes all the difference, how to build flavour from the base up, and the secrets behind key steps like la tostatura (toasting the rice to seal each grain and create a rich, nutty base), sfumare (how and when to deglaze with wine), and the ladle-by-ladle addition of broth to draw out the rice’s natural starches and develop risotto’s signature creamy consistency.
Once you’ve learned the fundamentals, Chef Fabricio will inspire you to adapt this classic risotto by incorporating your favourite seasonal vegetables, mushrooms, or even seafood to create your own versions of the dish at home.

Across three generations, the Viberti family has stayed true to the belief that great wine reflects the unique terroir of its vines.
Founded in 1923, the Viberti Giovanni winery began when Cavalier Antonio Viberti started producing wine for guests at his locanda (a small inn) in the village of Barolo, in Italy’s northern Piedmont region.
In 1967, Antonio’s second son Giovanni and his wife Maria modernized the winery and expanded its reach into European and US markets.

Cooking With Fire
is an outdoor, hands-on cooking experience guided by Chef Fabricio Daros, who will show you how to bridge ancient techniques with modern tastes to cook beautifully over live flames.
After meeting in the lobby of PYRO Wood-Fired Kitchen & Bar, Chef Fabricio will guide you outside to one of our patios.
There, Chef Fabricio will explain the difference between direct and indirect heat, when to use dry rubs or marinades, the importance of proper seasoning, and why letting meat reach room temperature is essential for great grilling.
Then it’s your turn!
After exploring some key techniques, you’ll put them into practice by preparing, and savouring, an outdoor flame-kissed feast featuring four premium beef cuts from the L’OCA Butcher Shop, alongside handpicked selections of pork, lamb, poultry, and game, served with our signature garlic bread and a spread of seasonal vegetables.

Through outdoor education, we aim to foster responsible environmental stewardship and a deeper connection to nature. Research shows that time spent outdoors improves mental well-being, cognitive function, and problem-solving skills, while enriching overall quality of life. This program promotes ecological literacy and conservation-minded values, which are key to addressing today’s environmental challenges.
Participants in
Fishing 101
will learn about the different kinds of fisheries in Alberta, how to identify Alberta's sport fish species, and the various tackle used to catch them. We’ll review the
Alberta Sportfishing Regulations
and how to interpret the harvest limits for different fisheries.
After the presentation in the clubhouse, we’ll head down to the fish pond with fishing rods & tackle to learn hands-on fishing techniques as we try to catch some rainbow trout in our Fish Pond.
Registrants will learn:
safety precautions and equipment
the best times to go fishing
essential fishing equipment and tackle
how to tie a fisherman's knot
how to cast and reel in your lure
how to effectively work your lure
how to set the hook
how to measure the length of your fish
the proper technique for gently releasing your fish
Bring your enthusiasm, we'll provide the fishing gear, learning opportunities and the pond to fish in!
Minimum Attendance Age
If a youth is attending without adult accompaniment, they must be 15 years of age or older. If the youth is accompanied by an adult however, there really isn’t a minimum age. As long as they are old enough to make it through this session's activities and do so safely, they are absolutely welcome to attend.

Don Brockway
Don Brockway has been hunting since he was 12, and fishing since he was a young boy. With a profound appreciation for nature, he loves hunting, fishing, and spending time outdoors. After a 31-year career as a Locomotive Engineer with Canadian Pacific Railway, the SPFGA is fortunate to be able to call Don our Maintenance Technician.
Brandon Myre
Brandon Myre is one of our new SPFGA Board members who chose to join our team because his interests and values align closely with those of the SPFGA. As an Executive Union Officer and Committee Chairperson with Canadian Pacific Railway, and as an avid hunter, archer and angler, Brandon has tonnes of experience coaching and mentoring people of all ages on a multitude of topic areas.
Delinda Ryerson
Delinda Ryerson has nearly three decades of experience in fisheries and wildlife-related research and management in Alberta. She served as a Fisheries Biologist for Alberta Fish and Wildlife for nine years. Some of her work was integral in determining the status of northern pike fisheries throughout the province, and the subsequent provincial harvest limit reductions for northern pike.
For the past two years, she has served as the Executive Director of the Sherwood Park Fish and Game Association (SPFGA). In this role, she has been instrumental in launching the SPFGA Naturalist Series, the SPFGA Outdoor Woman’s Program, and the SPFGA Outdoor Youth Program, all aimed at reconnecting people with nature and the outdoors.

THE EVENTOn July 9th, 2025, the Kevin Karius Celebrity Golf Classic, presented by Prism Flow Products, will kick off at the Belvedere Golf and Country Club in Sherwood Park. Teams of four (4) participants plus one celebrity (five-some) will gather to tee off in support of a great cause, Easter Seals Alberta. Registration to participate in this exciting event is $375 per golfer or $1,400 for a team of 4. All registrations include a light breakfast, 18-holes of golf on a private course, shared power golf cart, driving range/putting green privileges, a Super Ticket for the draws, a Prime Rib buffet dinner and a silent/live auction. There are also many sponsored beverage and food holes, so you are guaranteed to go home neither hungry nor thirsty.
