I stayed there only for one night but could have stayed at least one other! The location is perfect to visit Puglia, easy to reach by car but also walking distance to visit the city of Ostuni. The building has been so well refurbished from keeping its authenticity to very exclusive services and modern amenities. Each room has its one style and story. The staff is charming and welcoming. They assisted me in all my requests. Breakfast, lunch and Diner are fab, the bar itself worth the visit. Happy contribution to their new orange/peperancino marmelade 😉. All is said, just need to try it now!

We were looking for an unforgettable dining experience and Restaurant 700 delivered in spades! The restaurant is an architectural masterpiece, the attentive staff set the tone for what would become a truly special evening. But it's the care Chef Kevin put into each dish that truly steals the show at Restaurant 700. From the amuse buche to the cotton candy surprise dessert, each dish is a masterpiece, expertly crafted with the finest ingredients and presented with exquisite attention to detail—a symphony of flavors and textures that my husband and I will always remember. I enjoyed a wonderful stay in Ruby Suite (just be aware the bathroom is quite dangerous - lots of slippy steps to get in/out of the bath/shower area). My visit was entirely spoiled by being accused of stealing a bath robe on my departure. I was a solo traveller. When I arrived there was one robe in the wardrobe, which seemed sensible. When I left this robe was on a hook in the bathroom. The reception staff asked me to wait whilst they re-check the room and returned to tell me, incorrectly that I was supplied with 2 robes. I felt compelled to empty my bag in reception to show I had not taken one. The price listed in the room to purchase the robe was €195 which I was determined not to be charged. I have stayed in 5 star hotels all over the world and have never been treated in such a humiliating way. Neither have I ever stolen a bath robe. Very poor customer care indeed!

We stayed here during our honeymoon in Puglia. Our room was beautiful with a terrace overlooking the bar and pool. We were well looked after and the staff were attentive. We had the taster menu with wine pairing and thought it was delicious. The tiramisu was unbelievable. The pool area is beautiful if a bit small. We had a massage at the spa which was excellent. A lot of the stuff in the hotel is for sale and it is fairly quirky, but we disagree with the other reviews that this impacts your stay. Would love to stay here again if we get the chance.

The interior is beautiful as one of the owners is an interior designer, exceptional staffs. But it is a hotel I do not intend to come back neither will I recommend it to friends due to the attitude of one the owner. I booked a suite from 23rd to 31st August, fully paid and added additional service of massage, wine tasting and yoga class which cost over €700. Due to the fact that they were fully booked for the Spa, the manager decided to book the massage on the check out date of 31st at 11.30. Most hotels allow late check out. And business is all about up selling, so it’s to their advantage to give that late checkout of 1 hour. As I was carpooling with friends visiting from Australia who were staying at a nearby Hotel. I discussed with the manager that they would leave their bags at 10.30am until I finished my massage and checkout. Which meant my bags would still be in my room for the hour of using the Spa until I checked out. Unfortunately the manager was not around, I had to deal with the absolutely rude owner telling me the manager was been generous to have booked my Spa appointment for 11am. She claimed the Spa is separate from the hotel . I’m sure with such attitude she was definitely making money from the Spa. This should be made known to guest that the facilities are not part of the hotel. She was discriminatory and condescending, she nonchalantly told me to take my bags, and get dressed in the Spa. I have never in my life seen such incompetence. She even went as far as telling me she has been around the world and no hotel accommodates late check out or allow guest to finish their spa treatment and return to their room. Telling me I should not have assumed that I was given a late checkout from 11.30am to 12.30am the duration of my massage. Customers are not always right but the way you treat your customer determines how your business would last in a competitive business environment. Repeat business is solely based on your customers experience.

We found this property to be very disappointing! We booked Paragon 700 for three nights in a Superior Suite. When we arrived, we were shown our room which was called "Onyx". The room was totally black from the walls to the ceiling, with a door onto the laneway, another to the breakfast room and just a small high window above the door that led to the lane. The lighting was extremely subdued so we could not see anything and with a rectangular sunken bath we found it to be not only unappealing but also dangerous. We asked to be moved and were relocated to "Ruby" which was a large barren room with a red bedhead, hence the name “Ruby”, a very minimal amount of rustic furniture, a tiny wardrobe and no luggage racks. Unfortunately neither rooms were anything like the pictures in the review published online by The Telegraph whose journalist stayed at the property on a complimentary basis and also earn a commission if you book via the links on their website. Clearly The Telegraph used promotional pictures which certainly weren't anything like the rooms we experienced at this property. We couldn't get a good night's sleep as the air conditioning rattled throughout the night and when we reported it to reception, we were told it was because it was "an historic building". Aren't they all in Italy? The exhaust fan in the bathroom sounded like a motorbike with a faulty muffler, which started whenever you turned the bathroom light on, which you had to do because there were no windows and it was pitch dark without the light on. Fortunately we turned the lights off at night so the noise from the fan didn't compete with the rattling sound of the air conditioner. We asked for recommendations for local restaurants where we could dine outside of the hotel and when I mentioned the ratings of certain restaurants on TripAdvisor that I was considering booking, a member of staff responded with "TripAdvisor is just for tourists!". Sorry but I thought that is what we were and what the hotel catered for. The woman on reception was extremely officious and from our interaction with her we felt as though we were interrupting her whenever we had to ask for assistance with anything from help with the faulty air conditioner to a local map to find our way around Ostuni. She told us that they’d run out of maps but her colleague was able to find one for us half an hour later when she’d signed off. Breakfast was handed out: an extremely minimal portion of previously diced fruit, a slither of toast with eggs which were never cooked as requested and stale pastries. I believe you can always measure the quality of a property by the quality and generosity of its breakfast and this property stood up to my theory. Even when we requested whole slices of toasted bread we were given two quarter triangles. Everything at this property is for sale! Paragon is an oasis in Puglia. Close to wineries, olive growing/oil producing ops, hiking, ebiking and all that Puglia offers. Hotel is beautifully equipped. Unusual art and decor pieces that catch the eye. Rooms are super clean and well appointed with one-of-a-kind fixtures and comforts. Showers and bathroom are luxurious. Restaurant meals--dinner and breakfasts--were unique, delicious, hot on the plate and extremely well served. Request for substitutes were met most agreeably.....no haughty chef who'd say no! Highlight was outside sitting area, courtyard and pool. Stunning. Music playlist was a joy to listen to. Highly recommended.

Absolutely beautiful property. So tastefully decorated. Everything is impeccable. Historical building in the heart of Ostuni. Staff is so friendly and always available to help in any way.
