Walking up to the castle, I was amazed by its powerful presence and stunning architecture. Once inside, I climbed to the top and was rewarded with a breathtaking view of the entire city of Kumamoto. Seeing the mix of ancient castle grounds and modern cityscapes was unforgettable! It felt like standing between history and today. #newyearnewtrip If you had not tried this specialty in kumamoto Japan, it is time you should. So what is this specialty food that I am talking about? Well, it is sea urchin croquettes, which the locals love so much. These small palm size uni croquettes are freshly fried daily and they are handmade on the spot, served hot to you. There three different types of croquettes - premium, risotto and original. I chose the original uni croquette and it was good enough for me. Inside it are mashed potatoes and that creamy uni oozing out as you eat into that crispy golden brown croquette. This is one excellent snack that is super delicious and super addictive!
