返璞归真:酿佳味,点滴精魄若天成 初见坐落在宣城市北郊的青草湖酒厂,我便被堆放成山的酒缸、酒坛所震撼,与此同时,黄酒的醇香在空气中弥漫,鼻尖品到的微甜,虽清浅却足以在嗅觉的记忆中历久弥新。就这样嗅着酒味,我开始听制酒师傅,讲述关于青草湖酒厂遵循古法制黄酒的故事。 青草湖黄酒以青草湖的水、空气为难能可贵的地利。被湖底上古植物聚积而成的积炭层,可以最大程度滤去杂质,加之雨季水流带进的岩层矿物质微量元素,使得青草湖的水成为塑造黄酒不可或缺的骨骼。而在青草湖地域的空气中,异于他处的不知名菌种,更是为黄酒的酿造增彩加色。这二者亦是“青草湖黄酒”不能被复制的重要因素之一。 酒厂内的黄酒皆择冬季开酿,自农历的立冬起,立春止,是为应天时。原因在于这时候的青草湖水较为清冽,可以有效抑制杂菌繁育,不仅能确保发酵的顺利进行,还能使酒在长时间的低温发酵中风味更佳。 酿制青草湖黄酒的美材,是源自于青草湖农场的“紫金糯米”和产自“诸暨”的酒坛。首选“诸暨”酒坛,原因在于诸暨坛透气性好,使得黄酒在窖藏过程中可以“呼吸”,选材的精到亦足以见得酒厂的严谨。 待一切完备,工匠严苛的古法遵循,是天时、地利、美材不被辜负的最重要环节。新鲜的糯米首先需要依密致和气温进行“浸米”,而后用清水冲净浆水,再进行沥干。沥干之后便可进行“蒸煮”,蒸煮是为了使米粒中的淀粉充分糊化,以利于糖化发酵菌的生长和淀粉酶的作用。 完成前面工序的糯米,接下来便需要先连同麦曲在500斤的大缸里发酵一周。 随后即被灌进小坛,堆放在厂区露天二次发酵三个月,期间不论风吹雨淋,抑或大雪纷飞,都不予置理。 三月之后,若无意外,小坛里便是发酵好的原酒了,将原酒取出,完成榨酒、添加焦糖色之后便再次封坛,开始为期3年、5年,甚至更长时间的分类窖藏。这一道道工序看似简单,但哪道工序出现少许偏差都会前功尽弃,样样不得懈怠方成佳酿! 此行我非常幸运,得以在酒厂老师傅的指点下,品尝了窖藏三十年的原浆黄酒。老师傅告诉我,品黄酒应先观其色,闻其香,而后尝其味,再者还能轻拈酒滴。好的黄酒色泽如琥珀,酒体清澄无杂质;酒香醇厚温和;酒味轻柔易入口,味道微甜,入口之后烈性稍显,后劲大;酒滴置指尖轻拈,触感柔滑不黏。若温饮黄酒,酒温低于体温为最佳,否则易降低品饮时的醇香感。 写在最后 隶属皖垦的青草湖酒业,继承了农垦人一贯的踏实和聪慧,在制酒方面不仅选材精到,工艺更秉承匠心,相信有这样一群人的坚持,这能与啤酒、葡萄酒并称世界三大古酒的“黄酒”,必能走得更长远,走得更开阔。
