一家把天妇罗做到极致的饭店，直接就是天妇罗配饭，很简单，也没有别的东西，里面厨师超级多，流水线做天妇罗，天妇罗还可以做半熟鸡蛋。

｛天ぷら  やまなか｝▹神户  天妇罗2星日本的米其林天妇罗中是没有三星店铺的，是从二星开始的。加上新进的北海道あら木，一共有8家二星店。东京3家关西2家。当然天妇罗的名店还有很多，天妇罗之神早乙女的みかわ，分数第1的美かさ,业界好评的静冈成生还有3万起步的にい留等等。     关西两家二星分别是神户三宫 やまなか和大阪北边的つちや。和寿司一样，天妇罗也有江户前天妇罗之说。区别就是面衣和油。关东风的面衣中加入了鸡蛋，并使用了混合芝麻油的进行油炸，炸出的天妇罗呈焦黄的&ldquo;狐狸色&rdquo;，多搭配天妇罗酱汁蘸着吃。而关西风的天妇罗面衣中未使用鸡蛋，油中没有加入芝麻油，所以做出来的天妇罗呈现白色，多搭配各种食盐一起吃。       之前推荐过的京都「京星」就是典型的关西风，那家可是我的心头好。今天的这家天妇罗店，虽然位于关西神户，却是明显的「关东风」，芝麻油炸下金黄的面衣包裹着应季的食材，又可能为了迎合关西当地人的习惯，舍去了天妇罗蘸汁，而搭配了三种食盐：芥末盐，柚子盐和白食盐。       我觉得やまなか的食材上算是一大亮点，拿常见的莲藕来说，大部分店铺是横切成片，做成花瓣形状。这里的莲藕是竖切成柱状，于是一口咬下去藕断，面衣和藕丝糅合在一起，很大程度上提高了这道菜的层次感，同时又增添了趣味性。       还有一道是 鱼翅天妇罗，整片鱼翅就这样原原本本的裹上面衣下锅，外层香脆，内层嫩滑。确实是一次很有品质的美食体验。  （说一句比较重要的题外话，为了保护生态平衡，还是提倡拒食鱼翅。）
