The ZephyrAlways a wonderful experience dining at Shisen Hanten. Newly renovated - it's a beautiful restaurant found on the 35th floor of Mandarin Gallery / Hilton Hotel. Score a booth table and get a wonderful view of the city. The must order dish is Chef Kentaro's mapo tofu served in a claypot. Served steaming hot - the tofu is very balanced in it's flavours and best eaten spooned over their beautifully cooked Japanese rice. The mapo tofu comes with a complementary glass of Shisen Hanten's own curated tea served in a champagne flute cold. Poetically named "天府藏茗" or Szechwan Harmony - it is a blend of aged pu'er, roasted oolong and chrysanthemum. I got a whiff of rose as I slipped the tea.My other favourite dish here is the classic Peking roast duck. The dish comes with a basket of pancakes and condiments for you to make little duck skin rolls. You can order a "second course" for the duck meat to be prepared as another dish (sautéed in onions and ginger, black bean sauce or served up in fried rice or ee-fu braised noodles).Well worth a visit if you are in town!
