Back in the city, I rented a bicycle to ride along the top of the magnificent 14th-century **Ming City Wall**, enjoying panoramic views of the old capital from one of the world's largest and best-preserved fortifications. As dusk fell, the energy shifted to the bustling **Muslim Quarter**, a labyrinth of food stalls where the air fills with the sizzle of lamb skewers and the sight of hand-pulled *biangbiang* noodles. Here, history is something you taste. The spiritual heart of the city is the serene **Giant Wild Goose Pagoda**, built to house sacred Buddhist scriptures. Climbing its tiers offers a moment of quiet reflection and a fantastic view of the modern city rising around its ancient core.
