We had dined at La Mirabelle in previous years but this was our first time post-pandemic, since the new guys took over. Wow, what a difference! They succeed brilliantly at the sort of projects that many restaurateurs merely meddle with. Like many, the Mirabelle guys are keen to source as many ingredients as possible from local producers. But here’s the thing - the Mirabelle sources ingredients from the *best* local producers. And then you have the brilliant cuisine. We have all heard the claim of ‘traditional food with a modern twist’ but, once again, the Mirabelle nails it. Pâté de fois gras with lentils, for instance. It sounds odd but it’s actually wonderful. And then there’s the fabulous boudin (black pudding) which is served on a bed of dauphinoise potatoes and sliced apple. You cannot imagine how good it is. You simply have to taste it.
