丰腴之美《风味人间-杂碎逆袭记》曾不吝笔墨地拍过鮟鱇鱼肝的收获,相信许多朋友都曾经被日料店里的这一款美味鱼肝所倾倒吧!我曾经很骄傲地庆幸自己还吃过比鮟鱇鱼肝更美味的魔鬼鱼肝,那是我在帮轩尼诗策划“重新发现中国味”时,在湛江领略到的一种极致味道。但很快,我的认知记录又再次被刷新了。这次在骄阳如火的夏天来到厦门,专门拜会了厦门当地的餐饮标杆企业、著名的黑珍珠餐厅“上青本港海鲜”,这里也是轩尼诗重新发现中国味的厦门站晚宴举办地。在参观海鲜池的时候,我第一次看到了须鲨这种模样奇怪的鱼类,当地美食家海鲜大叔介绍说,这种被称作日本须鲨的鲨鱼在福建沿海都有出产,属于本地品种而且属于可食用鱼类,他还神秘地告诉我:须鲨的鱼肝是一道大美味。上青的这一顿海鲜大餐让我感受到了老板杰哥的各种巧妙心思,许多菜肴都值得专门琢磨来写,其中印象最深的就是这一道“上青腩肝煮”,须鲨的鱼腩和鱼肝一块用类似酱油水的方式简单烹煮,杰哥在旁边介绍说,须鲨的肝实在太肥美了,空口吃下去怕是无福消受,所以他建议我们盛在米饭上食用,可以用勺轻轻地把肝和饭压为一体,感受那种接近热巧克力浓浆一般的肥美和浓郁。我专门单独品尝了一口须鲨肝,口感滑嫩,仿佛吹弹可破,味苦甘凉,在巧加烹制后又仿佛真的具备了巧克力那种深邃神秘的香气,这一口肥美,刷新了我的认知。鱼肝之美在于那种油脂的丰腴坍塌在你舌苔之上的软弱无力,却又瞬间从娇羞化身猛虎,油脂的香味肆意泛滥,让人舒适而沉醉。
